This is my modern rendition of an traditional Chinese dish "Lotus Leaf Steamed Chicken".” Usually, it is made with sticky rice and pork sausage but instead, I used glutinous millet (the sticky version of regular millet!) and lotus seeds.
You may find dried lotus leaf in Chinatown. The size of the unfolded dried lotus leaf is enormous and it is a beauty. If you cannot find the leaf, make this dish in tamale husks or other dried plant wraps of your culture.
Don't be intimidated by steaming. It is actually very easy to make at home. The key is to have fresh and high quality ingredients, and I promise you the dish will come out delicious!

Ingredients
2 tbsp lotus seed
1 pc whole dried lotus leaf
1 chicken thigh (without skin)
1 tbsp soy sauce
cooking wine 1/2 tbsp
1 tbsp ginger, minced
2 tbsp scallions, minced
1/2 cup (60g) glutinous millet (or sticky rice)
2.5 tbsp carrot, minced
Directions
Soak the lotus seeds and lotus leaf overnight.
After soaking, remove the center stem (“lotus hearts”) if any from the lotus seeds.
Rinse the millet 2 to 3 times.
Prepare the chicken by making 3-5 slices diagonally on the chicken thigh for better marination of flavor.
Marinate the chicken thigh with half of the chopped scallions, minced ginger, soy sauce, and cooking wine.
In a bamboo steamer or any steamer, first lay the lotus leaf flat, add some millet, carrot, and lotus seed. Next add chicken, some more millet, lotus seeds, the minced carrots, and rest of the scallions.
If your chicken thigh is big, you might need more glutinous millet or sticky rice!
Wrap all the ingredients with lotus leaf and steam it for 20-30 minutes. *After wrapping all the ingredients, you can turn the lotus leaf wrap over for better seal of the ingredients.
Serve with additional soy sauce or any sauce of choice.
